Simple Orange Muffins Recipe
Recipe Ingredients
1 large orange
1 oz tofu
3/4 cup sugar, (less if desired)
3 tbsp oil
1/2 cup water or orange juice
2 cup flour
1 tsp baking soda
1 tsp cream of tartar
1/4 tsp salt
Recipe Preparation
Preheat the oven to 350 degrees F.
Finely grate the zest from the orange. Squeeze out and strain the
orange's juice. Set zest and juice aside.
In a bowl, thoroughly mash the tofu with the sugar, or blend together
with an electric mixer. Mix in the finely grated orange zest and
juice from the orange, oil, and water (or additional orange juice).
In a large bowl, sift together the flour, baking soda, cream of
tartar and salt. Blend in the orange juice mixture. Spoon batter
into muffin pans, filling each cup about 2/3 full. Bake for about 15
minutes, or until muffins are starting to brown very lightly, and
toothpick inserted in center comes out clean.
Karen's notes: I always use tofu as an egg-replacer in baked goods,
with excellent results. It may only be luck, or coincidence, so if
you don't have a piece of tofu handy, try omitting it.
These muffins are pretty sweet, so you may want to decrease the
amount of sugar used. The sugar does seem to act as a humectant
though, so the muffins will stay a little moister in storage if you
use more sugar.

Food Tips of the Week
Advice on losing weightIf you enjoy your food, but want to become thin and also improve your overall physical condition, then, as most people know, you should follow a meticulously prepared wholesome dietary regime. Theoretically, this needs to involve 5 standard portions of grains, cereals and vegetables every day and also contain the optimum fusion of important nutrients.
Some reduced carb diet pointers:
* Replace sugar with a low carb substitute such as splenda. Most recipes that require sugar can be modified to make use of a sugar replacement like splenda. It doesn't weigh the same so you will have to do a bit of trial and error and it may not work for everything, but it gives very good results for the most part.
* Make low carb breadcrumbs for breaded foods. Whilst you may be able to buy reduced carbohydrate breadcrumbs, you can make them at home by simply using low carb bread. All you have to do is simply toast the reduced carb bread in your oven on a baking tray. Once it is well toasted, whizz it in your food processor or blender. Keep in a tupperware container.
Cruciferous vegetables, Tasty superfoods that aid Dieting
(includes Cauliflower, Cauliflower, Turnips and Radishes)
Altthough not always popular with children, these vegetables are full of vitamins (folate and vitamin c), minerals (eg. selenium), fibre, chlorophyll, antioxidents, indole-3-carbinol and isothiocyanates..
Over and above their numerous beneficial effects, the minerals and nutrients in these are believed by nutritionalists to significantly lower the risk of getting cancer.
