Acapulco Chicken Recipe

Recipe Ingredients

2 cup canned unsalted chicken broth, defa, tted
1 tbsp olive oil
2 tsp ground cumin
2 tbsp pickling spice
1/2 red bell pepper, sliced
1 lb boneless skinless chicken breast ha, lves
1/2 yellow bell pepper, sliced
2 tbsp minced jalapeno chili with seeds
1 onion, halved, thinly sliced
1/3 cup rice wine vinegar
1/4 cup fresh cilantro leaves
3 large garlic cloves, minced

Recipe Preparation

Boil broth and pickling spice in heavy large saucepan ten minutes.
Strain and return liquid to saucepan. Add chicken, onion, vinegar,
garlic, oil and cumin to pan. Simmer over very low heat until chicken
is just cooked through, about ten minutes. Transfer chicken and
onions to shallow dish. Top with bell peppers and minced chilli. Boil
cooking liquid until reduced to 2/3 c, about ten minutes. Pour liquid
over chicken and let cool 30 minutes. Add cilantro to chicken
mixture. Cover and refrigerate until well chilled, turning chicken
occasionally, about 4 hours (can be prepared one day ahead). Slice
chicken and transfer to plates. Top with marinated vegetables and
some of the juices. Pass tortilla chips to use as "pushers." 130
calories per serving, 4 g fat, 72 mg sodium, 44 mg cholesterol. From

In deciding on a meal plan, it is important to attempt to moderate your consumption of fats, refined carbohydrate and salt.

* Make reduced carb breadcrumbs for deep fried or oven baked foods. Although you may be able to buy low carb breadcrumbs, you may make them yourself by using low carb bread. All you have to do is simply toast the low carb bread in a pre-heated oven on a sheet of cookie paper. Once it is quite hard and crispy, process it in your food mill. To store, keep in an airtight container.

* Understand the food labels Don't trust sales blurb that claims to be 'low carb' - check the nutritional information on the back of the can or package. Many are only marginally lower and in some cases still more than a competitors usual brand. In addition, beware of 'low sugar' and 'low fat' labels - 'low sugar' doesn't always mean 'low carb' - often the carbs are identically the same.

The flavonoids which exist in these types of food are thought to have properties in helping to prevent cancer.
Experts investigating the medical effects of flavonoids suspect that they could have many other health giving properties, amongst them, anti-viral and antitumor properties.
Most also have a low calorie count, so make sure you add them to your weight loss regime.
