Sauce Champignon Locke-Ober Recipe
Recipe Ingredients
1 tbsp butter
1 shallot -- chopped fine
1 cup fresh mushrooms -- sliced
1/2 cup dry red wine
1 cup brown sauce -- hot (see
1 recipe)
Recipe Preparation
Place butter, shallots, and mushrooms in a saucepan. Cook slowly
until all liquid from mushrooms disappears. Add wine and continue to
simmer until wine is reduced by half. Stir in hot brown sauce and
simmer for 30 to 40 minutes.
