Braised Meat Loaf

 

Ingredients

1 lb ground beef
1 lb ground smoked ham, cooked
1 lb ground pork
3 eggs, large
2 tsp salt
1/2 tsp pepper
1/4 tsp nutmeg, ground
1 chipotle sauce, *
1/2 cup dry bread crumbs
1/4 cup instant corn tortilla mix
1/2 cup vegetable oil



 

Preparation

* See Sowest 2 for recipe. Mix ground beef, fully cooked ham,
ground pork, eggs, salt, pepper, and the nutmeg. Shape into a loaf.
Cover and refrigerate for 1 hour. Prepare Chipolte Sauce and set
aside. Mix bread crumbs and tortilla mix. Coat meat loaf with bred
crumb mixture. Heat oil in 10-inch skillet until hot. Cook meat loaf
in oil over medium heat until brown on all sides. Pour Chipotle Sauce
over meat loaf. Heat to boiling and reduce the heat. Cover and simmer
until done; about 1 hour.
