Irish Seitan Stew Recipe
                                    Recipe Ingredients 
                                    2 cup seitan -- diced 
                                    1 cup carrots -- roll-cut 
                                    1 cup parsnips -- roll-cut 
                                    1 cup onion -- diced 
                                    1 cup potatoes -- peeled and 
                                    1 diced 
                                    2 bay leaves 
                                    1/2 tsp rosemary -- whole 
                                    1/2 tsp garlic -- minced 
                                    1/2 tsp basil 
                                    1 tbsp parsley -- fresh, chopped 
                                    2 cup water 
                                    5 tsp tamari soy sauce 
                                    1/2 cup celery -- flaked 
                                    4 tbsp water -- cold 
                                    4 tbsp cornstarch 
                                    
  
Recipe Preparation
                                    Put seitan, veggies (except celery), and herbs and spices in a large 
                                    pot (Dutch oven or small stock pot will do). Sautee in a little water 
                                    or veggie broth at medium heat for about 8 minutes, stirring to 
                                    prevent burning. Add water and tamari and bring to a simmer. Cook 
                                    about 10 more minutes or until veggies are soft. 
                                     
                                    Add celery (add at end to help retain color and texture). 
                                     
                                    Mix the 4 T cold water with the cornstarch. Turn off heat under stew. 
                                    Vigorously stir in cornstarch solution. Turn heat back on under stew 
                                    and stir until thickened.

                                       Dieting made easyOne useful tip is to drink plenty of water. From time to time at some stage in a hectic morning, you guess that you want a snack but in fact you might just need a refreshing glass of water or orange squash.                                       * Know what is in your food Be sceptical of advertizing that claims to be 'low carb' - check the nutritional information figures on the back of the tin or package. Quite a few are only slightly reduced and in some cases still higher than a competitors standard brand. In addition, beware of 'low sugar' and 'low fat' labels - 'low sugar' doesn't always mean 'low carb' - usually the carbs are exactly the same. 
                                       
                                      * It is possible to make really nice smoothies by using low carbohydrate yogurt. Yes, you can't really describe it as cooking, but if you love smoothies you can make perfectly acceptable alternatives by using reduced carbohydrate yogurt and fruit. Of course, you will need to ensure you only make use of fruit that is low in carbs and use the whole of the fruit as you need the fiber.
