Cucumber With Goat Cheese Recipe
Recipe Ingredients

Recipe Preparation
This ultra-simple entree depends absolutely on the quality of its
ingredients. The cucumbers must be at their peak, the goat cheese
the best you can buy and the oil hazelnut if possible but, in any
case, a well-flavoured nut oil. As hazelnut oil can be difficult to
find, you could substitute a walnut or macadamia nut oil.
Score 750 g of cucumbers lengthwise with the tines of a fork or peel
them if you prefer. Slice paper thin, put in a colander, sprinkle
with salt and let them degorge for half an hour.
Turn out of the colander, rinse and dry with paper towels. In a bowl
toss the slices with 50 mL lemon juice, then arrange them on six
plates. Dust with white pepper.
Cut about 100 to 120 g firm goat cheese into thin slices and arrange
two or three on each plate. Sprinkle 50 mL of hazelnut oil over the
six servings.
Makes 6 servings.

Food Tips of the Week
Dieting tipsIf you wish to become slim and boost your all round health, then, as any dietician will tell you, you really should eat a thoughtfully calculated sensible daily routine. At best, this should include five measures of grains and vegetables each day and also incorporate the right mix of important nutrients.
The case against low carb diets
Its popular as hell, but it is truly safe for you?
Elevated consumption of animal-based products might lead into raised consumption of saturated fat and cholesterol, which most authorities believe will increase the probability of heart conditions.
Remember, one point that is frequently overlooked, it is extremely hard (though not technically impossible) for vegetarians to follow a reduced carb diet.
Carotenoid foods
(includes paprika, rose hip puree and tomato ketchup)
These colorful healthy superfoods have high levels of carotenes thought to play a role in minimizing the chances of contracting, particularly of the esophagus. A good number also have a low calorie count, so should be included in your diet system.
