2 cup plums pitted -- chopped
1/2 cup honey
1/4 cup lemon juice
2 tbsp onion -- minced
1 tsp lemon zest -- grated
1/2 tsp fresh ginger root
1/4 tsp salt
1/4 tsp cloves -- ground
1/4 tsp allspice
1 salt and pepper -- to taste
Combine all ingredients in a medium saucepan, bring to boil, reduce
heat and simmer for 15 min. or until plums are completely cooked.
Puree mixture in a blender or food processor. Taste and adjust
sweetness, adding more honey if nessary. return to saucepan and
simmer for 5 min.
