Okra Italiano

 

Ingredients

1 onion, chopped
1 clove garlic, sliced
4 large tomatoes, coarsey chopped
1 lb okra, cut into 1/2 thick rounds
1/2 cup wine, white
1 bay leaf
1 tsp oregano
1 pinch sea salt
1 pinch black pepper
6 cup rice, cooked, hot
2 tbsp parsley, fresh, chopped
2 tbsp olives, ripe, sliced



 

Preparation

Combine onion, garlic, tomatoes, okra nad wine in a lare skillet and
bring to a boil.

Add bay leaf and oregano. Lower heat, cover and simmer for 20
minutes, stirring occasionally.

Season with salt and pepper and ladle over rice.
Garnish with parsley and olives.
