"I prefer to regard a dessert as I would imagine the perfect woman: subtle, a little bittersweet, not blowsy and extrovert. Delicately made up, not highly rouged. Holding back, not exposing everything and, of course, with a flavor that lasts."
Graham Kerr (the Galloping Gourmet)

"The dessert crowns the dinner. To create a fine dessert, one has to combine the skills of a confectioner, a decorator, a painter, an architect, an ice-cream manufacturer, a sculptor, and a florist. The splendour of such creations appeals above all to the eye - the real gourmand admires them without touching them! The magnificence of the dessert should not allow one to forget the cheese. Cheese complements a good dinner and supplements a bad one."
Eugene Briffault

Honey Gelato

Ingredients

1 package unflavored gelatin
1/2 cup instant nonfat dry milk
2 cup milk
1/2 cup honey
1 tsp orange juice
1 tsp lemon juice
2 egg whites

Preparation

: This is a trendy type of icecream that is also good for you,
and best of all, wonderfully low in calories. A 1/2 cup serving has 70
calories, so you can make up a batch and indulge without guilt.

Mix gelatin and dry milk in a saucepan. Stir in skim milk, cook over
low heat, stirring constantly until gelatin dissolves. Remove from
heat.

Stir in honey and juices. Pour into a freezer try, 9" cake pan or
ice cube tray and freeze for 1 hour.

Pour the mixture into a chilled bowl and add the egg whites. Beat at
high speed with an electric mixer until mixture is fluffy. Return to
freezer container, cover, and freeze until firm.
