"I prefer to regard a dessert as I would imagine the perfect woman: subtle, a little bittersweet, not blowsy and extrovert. Delicately made up, not highly rouged. Holding back, not exposing everything and, of course, with a flavor that lasts."
Graham Kerr (the Galloping Gourmet)

"The dessert crowns the dinner. To create a fine dessert, one has to combine the skills of a confectioner, a decorator, a painter, an architect, an ice-cream manufacturer, a sculptor, and a florist. The splendour of such creations appeals above all to the eye - the real gourmand admires them without touching them! The magnificence of the dessert should not allow one to forget the cheese. Cheese complements a good dinner and supplements a bad one."
Eugene Briffault

Golden Puff Doughnuts

Ingredients

2 cup all-purpose flour
1/4 cup granulated white sugar
3 tsp baking powder
1 tsp salt
1 tsp nutmeg or mace
1/4 cup wesson or crisco liquid oil
3/4 cup milk
1 egg

Preparation

Sugar & Cinnamon Mixture Sift together dry ingredients. Then stir
all ingredients together with a fork until thoroughly mixed. Drop by
teaspoonsful (small size) into deep hot oil or fat fryer at (375
degrees). Fry until golden brown (about 3 minutes). Drain on paper
towels and cooling rack. Roll warm puffs in cinnamon-sugar or glaze
puffs by dipping into a thin confectioner's sugar icing. DO NOT cook
too many at one time, as fat will cool down and puffs will absorb
grease and remain doughy.
