Gingerbread Yule Log

 

Ingredients

3 eggs separated
1/2 cup molasses
1 tbsp butter or margarine melted
1/4 cup sugar
1 cup flour
3/4 tsp each baking powder & soda
1/8 tsp salt
1/2 tsp each cinnamon, cloves and
1 ginger
1 filling:
1 1/3 c icing sugar
1 1/2 cup whipping cream
1 tsp cinnamon
1/4 tsp cloves
1 tsp vanilla



 

Preparation

in mixing bowl beat yolks on high until thickened, about 5 min. beat
in molasses and butter. In another bowl beat whites until foamy,
gradually add sugar beating until soft peaks form. Fold into yolk
mixture. Combine dry ingredients and gently fold into egg mixture
until well mixed. Line with waxed paper and grease and flour a 15 x
10 x 1 in. pan. Spread the batter into pan and bake in 375 F oven for
9 - 12 min. Turn out onto a towel dusted with icing sugar and peel
off paper and roll up cake in towel. Cool. Mix filling and unroll
cake and spread with half of filling, roll up and spread rest of
filling on top. Sprinkle with more cinnamon if desired.

 

 

Servings: 12
