"I prefer to regard a dessert as I would imagine the perfect woman: subtle, a little bittersweet, not blowsy and extrovert. Delicately made up, not highly rouged. Holding back, not exposing everything and, of course, with a flavor that lasts."
Graham Kerr (the Galloping Gourmet)

"The dessert crowns the dinner. To create a fine dessert, one has to combine the skills of a confectioner, a decorator, a painter, an architect, an ice-cream manufacturer, a sculptor, and a florist. The splendour of such creations appeals above all to the eye - the real gourmand admires them without touching them! The magnificence of the dessert should not allow one to forget the cheese. Cheese complements a good dinner and supplements a bad one."
Eugene Briffault

Cream Cheese Whities

Ingredients

FILLING

2 tbsp butter
1 package (8 oz) cream cheese
2 tsp maple syrup

BATTER

1 cup maple syrup
3 each eggs
2 tsp vanilla
2 tbsp cream
2 cup white unbleached flour
1/2 tsp baking powder
1/2 tsp baking soda
1/2 cup nuts
1/4 tsp almond extract

Preparation

For the filling, combine butter and cream cheese with maple syrup; set
aside. In a separate bowl, blend together maple syrup, eggs, vanilla,
and cream. Add flour in three additions, mixing well after each
addition. Add baking powder and baking soda. Stir in nuts and almond
extract. Pour half the batter into an oiled 8-inch square baking
dish. Carefully spread cream cheese filling on top. Spoon remaining
batter over the top. Bake at 350 degrees for 30 minutes. Top will be
golden brown, perhaps with some "whitie" peeking through. Serve warm.
