Cranberry-Orange Loaf

 

Ingredients

1 cup cranberries
1 3/4 cup flour
1 cup sugar
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1/2 tsp salt
1 egg
3/4 cup orange juice concentrate
1/4 cup vegetable oil



 

Preparation

Coarsely chop cranberries. Mix dry ingredients, stir in cranberries.
Mix liquids together, then add to dry, beat for about a half minute
(batter will be lumpy). Greased loaf pan. 350 degrees for 60 - 65
minutes, or until a toothpick inserted in the middle comes out clean.
