Country Oat Cake

 

Ingredients


CAKE

1 package spice cake mix (18.5 oz.)
1 cup quaker oats, uncooked - (quick or o, ld-fashioned)
8 oz plain low-fat yogurt
3 eggs, or... egg substitute
1/4 cup vegetable oil
1/4 cup water
1 1/2 cup finely chopped apple - (about 2 med, ium)

TOPPING

1 cup quaker oats, uncooked - (quick or o, ld-fashioned)
1/2 cup brown sugar, firmly packed
1/4 cup margarine or butter, melted
1/2 tsp ground cinnamon
1 whipped cream (optional)



 

Preparation

Heat oven to 350 F. Grease and flour 13 x 9-inch baking pan. For
cake, combine first six ingredients. Blend on low speed of electric
mixer until moistened; mix at medium speed 2 minutes. Stir in apple.
Pour into prepared pan. For topping, combine oats, brown sugar,
margarine and cinnamon; mix well. Sprinkle evenly over batter. Bake
40 to 45 minutes or until wooden pick inserted in center comes out
clean. Serve with whipped cream, if desired.
