Middle Eastern Black Bean Salad
Ingredients
3 1/2 cup cooked, drained black beans
1 (1 cup dry)
1/2 cup red onion -- finely diced
1 large tomato -- seeded and diced
1 small green pepper -- seeded and
1 diced
1 medium cucumber -- seeded and
1 diced
1/2 cup chopped parsley
CHOPPED FRESH MINT DRESSING
1/4 cup lemon juice
1 tsp cumin
1/4 tsp salt -- (or to taste)
1/4 tsp pepper
1/4 cup olive oil
Preparation
Combine salad ingredients together and toss lightly. For dressing, add
spices to the lemon juice and beat in oil. Pour over salad and chill
for several hours.
