Chicken Cacciateri
Ingredients
3 lb frying chicken pieces
1/4 cup olive or vegetable oil
1 large onion, sliced
2 garlic cloves, minced
16 oz canned tomatoes
8 oz tomato sauce
1/3 cup kikkoman teriyaki sauce
1 tsp oregano, crumbled
2 bay leaves
Preparation
Brown chicken pieces thoroughly in hot oil in large skillet or Dutch
oven; remove. Add onion and garlic to oil and cook until onion is
translucent. Stir in remaining ingredients. Arrange chicken pieces in
sauce; cover and simmer 45 minutes, or until chicken is tender.
Discard bay leaves and skim off excess fat. Serve chicken and sauce
on bed of cooked spaghetti or noodles.
Makes 4 to 6 servings.
