Chicken With Peanut Sauce Recipe
Recipe Ingredients
2 large whole chicken breasts(2 lbs)
1/4 cup soy sauce
1 tbsp vegetable oil
1 tsp packed brown sugar
1/4 tsp ground ginger
1 clove garlic, crushed
1 peanut sauce:
1 small onion, finely chopped (optional)
1 tbsp vegetable oil
1/3 cup peanut butter
1/3 cup water
1 tbsp lemon juice
1/4 tsp ground coriander
3 drops red pepper sauce
1 dash brown sugar to taste
Recipe Preparation
Preparation : Cut chicken into 3/4 inch pieces. Mix with remaining
ingredients. Cover and refrigerate for at least 2 hours, stirring
occasionally. This can be broiled at 550 degrees on skewers for 5
minutes each side. I baked chicken pieces in a glass baking dish at
400 degrees for 20 minutes with all the sauce plus 1/2 cup water. I
thicken the juice with 2 tablespoons of cornstarch and same amount of
water. Cook and stir onion in oil in 1 1/2 quart saucepan until
tender. Remove from heat. Stir in remaining ingredients; heat over
low heat just until blended (sauce will separate if over cooked).
Serve on the side as a dip.

Food Tips of the Week
Losing weightDrink more water. At times during a hectic day, you guess you are peckish but in truth you might only want a restorative glass of water or cranberry juice. The sensations of needing food and needing a drink are close, but one can result in a fat tummy and the alternative is ok.
Some low carbohydrate diet guidlines:
* Don't miss meals Most low carb recipes are, errmm.., low in carbohydrates. Your body must have energy, and carbohydrates are a fast acting source of energy. A low carb diet needs great care in managing your intake of energy, as any energy given by fat or protein is much slower acting.
* Fiber is essential Cutting the carbohydrates in your meals usually results in fiber reduction as well. Look for reduced carbohydrate recipes that are rich in fiber to restore the balance.
Lycopene super foods
(includes apricot, papaya & baby jackfruit)
The phytochemical lycopene is a non-synthetic compound used to color foods and member of the same group of phytochemicals as carotene. This chemical is accountable for the deep red colour of quite a few natural foods.
Fortunately, unlike numerous nutrients, it does not become less effective if cooked but is genuinely improved by the cooking process.
. Its most valuable health contribution is that it works as an antioxidant and appears to help lower the risks of cancer.
Lycopene is the most powerful carotenoid quencher of singlet oxygen, which is correlated with aging of the skin. It's also believed to curtail the development of diseases affecting arterial blood vessels.
