Tips for Baking Bread

Start as early as you can, it will take aprox. 1.5 hours for the dough to double its size.
Make sure your water is the correct temperature, ideally 40-46 deg C (105 deg F to 115 deg F).
If the water is too warm it will kill the yeast, too cold and the yeast will not rise correctly.

Don't try to rush things, wait for the dough to rise properly before putting it in the oven.


Kneading the Dough

Dust your work area with flour, place the dough on the surface and dust with more flour.

Start from the part of the dough closest to you and use the heel of your hands to push down and away from you.
Turn the dough 90% and take the far end of the dough and fold it in towards you.
Push it down and away from you. Repeat this process until the dough feels smooth and stretchy and no longer sticks to your fingers.

Fast Dinner Rolls

 

Ingredients

1 package yeast
3/4 cup warm water (110 deg f)
2 tbsp sugar
2 tbsp oil
1/2 tsp salt
1 egg
2 1/2 cup flour (as much as 2 3/4 c)
1 soft margarine



 

Preparation

Dissolve yeast in warm water in a bowl. Add sugar, oil, salt, and
egg. Stir to mix well. Stir in one cup flour, mixing until smooth.
Cover with cloth and let rise in warm place for 15 minutes. Grease a
nine inch square pan. Stir batter down and add 1 1/2 cups flour. Stir
until mixed, then turn out on a floured surface. Knead 3 minutes. If
dough is sticky, add up to 1/4 cup flour while kneading. Divide dough
into 16 pieces, shaping each piece into a ball. Place in greased pan.
Brush with melted margarine and cover with cloth. Place over bowl of
warm water, on rack, and let rise for 25 minutes. Bake in 425 deg f
oven for 12 to 15 minutes or until light brown. Remove from oven and
brush tops with butter. Serve warm.
