Tips for Baking Bread

Start as early as you can, it will take aprox. 1.5 hours for the dough to double its size.
Make sure your water is the correct temperature, ideally 40-46 deg C (105 deg F to 115 deg F).
If the water is too warm it will kill the yeast, too cold and the yeast will not rise correctly.

Don't try to rush things, wait for the dough to rise properly before putting it in the oven.


Kneading the Dough

Dust your work area with flour, place the dough on the surface and dust with more flour.

Start from the part of the dough closest to you and use the heel of your hands to push down and away from you.
Turn the dough 90% and take the far end of the dough and fold it in towards you.
Push it down and away from you. Repeat this process until the dough feels smooth and stretchy and no longer sticks to your fingers.

Dinner Rolls

 

Ingredients


1 1/2 LB

3/4 cup water (for welbilt/dak
1 machines, add 2 tb more)
1 egg
3 cup all purpose flour
1 1/2 tsp salt
3 tbsp butter or marg
3 tbsp sugar
3 tbsp dry milk
1 tbsp gluten
2 1/4 tsp red star active yeast
2 tbsp melted butter to
1 brush on rolls
1 before cooking

1 LB

1/2 cup water (for welbilt machine
1 add 1 tb more water)
1 egg
2 cup all purpose flour
1 tsp salt
2 tbsp melted butter
1 tbsp sugar
2 tsp gluten
2 tbsp dry milk powder
1 1/2 tsp red star active dry yeast
2 tbsp melted butter for topping



 

Preparation

For my Hitachi: Have all ingredients at room temperature. I
microwave the water and butter for approx. 50 sec on high, then stir
in the egg to warm it as well.

Place ingredients in machine in order suggested by manufacturer.
Select dough cycle. At end of dough cycle, remove dough and turn out
onto a lightly floured board (or counter top) Cover with cloth and
let rest 10 minutes.

For 1 1/2 loaf, divide into 16 pieces of dough. For 1 lb loaf, divide
into 12 pieces of dough. Form each piece into a ball and place in a
9x13 pan for large recipe, or 9 inch square or round pan for the
smaller recipe.

Hint: On a cool day you can preheat oven at 140 for 1 mins, turn
oven off. Place covered rolls in oven and let rise until doubled (30
to 45 minutes)

After dough has doubled, remove pan from oven keep covered and then
preheat the oven to 400.

Brush rolls with melted butter: Bake 15 - 17 minutes or until golden
brown. Remove and cool on rack.
