Bagel & Eggs
Ingredients
3 bagels
1 tbsp butter
6 eggs
1/2 cup shredded low-fat cheese
1 (danbo or cheddar style)
1 green onion, sliced
1 pinch each salt and pepper
Preparation
Cut bagels in half to make 2 rings. If necessary, trim to make holes
about 1 inch round. Spread butter over cut sides; place, cut side
up, on well greased rimmed baking sheet. Broil for 2 minutes or until
golden.
Turn bagels over; break egg into center of each. Sprinkle cheese,
onion, salt and pepper over each egg; bake in 350øF oven for 12 to 15
minutes or until whites are set and yolks are slightly runny. Makes 6
