Thai Peanut Slaw

 

Ingredients

1 head nappa cabbage, shredded
1 cucumber, chopped
1 bunch green onions, sliced
1/4 cup salted peanuts, chopped
1 tbsp sesame seeds
2 cup bean sprouts

DRESSING

1/2 cup salted peanuts, very finely ground
1 1/2 tsp sugar
1 tbsp red pepper flakes
1 tsp fresh garlic, finely chop
1 tbsp peanut oil
3 tbsp rice vinegar or vinegar
1 tbsp soy sauce



 

Preparation

In large bowl combine all salad ingredients. In small bowl stir
together all dressing ingredients. Just before serving, pour
dressing over salad; toss to coat. Yield: 8 servings.

(1 serving): Calories 120, Protein 3g; Carbohydrate 6g; Fat 10g;
Cholesterol 0mg; Sodium 220mg.
