Appetizers are small first course dishes presented before the entree or main meal.


These are typically served at the beginning of the meal in order to inspire the appetite.

Frequently referred to as the "First Course." These normally consist of small portions of cold or hot foods (such as a salad, egg roll, crab cakes, buffalo wings etc) which are intended to set the digestive fluids to their duties and in doing so whet the appetite for the other courses to come.

Skewered Tortellini Appetizer

 

Ingredients

1 mild vinaigrette (see
1 recipe)
12 oz frozen tortellini
2 tbsp fresh basil or parsley --
1 finely chopped
1 prepare mild vinaigrette.



 

Preparation

2. Cook tortellini following package directions. Drain.

3. Toss warm tortellini with Mild Vinaigrette. Place in a covered
container and let stand at room temperature at least 30 minutes
before serving.

4. With a slotted spoon, drain tortellini and thread on short bamboo
skewers, two tortellini to each skewer. Arrange on a serving platter
and sprinkle with chopped basil.

* Timesaver Tip: Appetizer can be made up to 24 hours ahead and
stored, covered, in refrigerator. About 1 hour before serving, remove
tortellini from refrigerator and allow them to reach room
temperature, then transfer to skewers.
